Vegetable and Honey Feta Tray Bake

A tray bake is the easiest way to whip up a delicious nutritious meal. You can add your favourite vegetables or any that need using up. Simply chop your chosen veg into chunks (I keep the skin on mine for fibre), drizzle with olive oil, mixed herbs, and spices and bake at 180.c for 20-30 mins.

Recipe (Serves 4)


What you will need...


For the Tray Bake:

1 butternut squash (deseed)

2 red onions

2 sweet potatoes

200g feta

1 tbsp honey

4 tbsp olive oil

1 tbsp mixed herbs

1 tsp cumin

1tsp paprika


For the rest:

8 slices sourdough/rye bread

3 tbsp sesame oil

Fresh Basil leaves


Step-by-Step

  1. Wash your butternut squash and chop into chunks (deseed the middle). Peel the red onions and chop into chunks, wash the sweet potatoes, chop into chunks and add all together into a baking tray with the cumin, paprika and olive oil. Mix everything together.

  2. Make room in the middle of the tray for the block of feta, drizzle over the honey and mixed herbs. Bake in the oven at 180.c for 20-30 mins until golden.

  3. Place the sesame oil in a large frying pan and add the slices of bread (may need to do this in stages) flip once golden.

  4. Top the sesame toasted bread with the roasted feta and veg, tear over the basil.

  5. I added sprouted mung beans over this but thats optional

  6. Serve up and enjoy!
