Spelt Pizza topped with red onions, prosciutto, mushrooms, spinach, basil and a parmesan crust

This is surprisingly easy to make, you can of course buy pizza dough if you don't have time to let the dough rise. I didn't have mozzarella so topped mine with cheddar however I've changed the recipe accordingly. You can add whatever toppings you like!

Recipe (Serves 2)

What you will need...

For the dough:

250g spelt flour

1 tsp dried active yeast

1 tsp salt

1 tsp honey

1 tbsp olive oil

For the tomato base:

125g cherry tomatoes

1 garlic clove

1 tsp oregano

1 tsp olive oil


4 slices prosciutto

1/2 mozzarella ball

1/2 red onion

Handful spinach

3 mushrooms

Handful basil

Parmesan (optional)


  1. To make the dough mix the flour, salt and yeast in a bowl. Dissolve the honey in 125ml warm water and add to the bowl with the olive oil. Mix until combined then knead for 5 mins on a floured surface until smooth. Put in a bowl, drizzle with olive oil, cover and leave to rise for 1 hour until doubled in size.

  2. For the tomato base chop your cherry tomatoes into quarters and add to a saucepan with the olive oil on a medium heat, finely chop your garlic clove and add to the pan with the oregano, simmer for 5-10mins to reduce slightly.

  3. Slice the red onion lengthways and add to a frying pan with 1 tsp salt, cook until translucent then take off the heat.

  4. Pre heat the oven to 220.c fan.

  5. When the dough has doubled in size place on a floured surface, cut in half and roll out to make two 18cm x 30cm pizzas, transfer each to a floured baking tray.

  6. Spread over the tomato base leaving a 2 cm space for a crust, tear over the mozzarella, sprinkle over the onions, add the parmaham, mushrooms and spinach, grate the parmesan and sprinkle over the crust.

  7. Put in the oven and bake for 12-14 mins until golden, sprinkle over the basil and serve warm!
